Look, I know how a lot of people feel about fennel. I was one of them. But, if you're one of those that havn't yet learned to appreciate it, let me just ask you to try again. Pretty please? Trust me.
This braised white bean dish starts off with caramelizing onions and fennel. When the two bulbs cook low and slow, the flavors meld and turn very delicate. The fennel flavor is still detectable, but the pleasant sweetness takes over in the best way. And caramelizing tomato paste on top of it all knocks this culinary situation out of the park.
