Risotto is one of those dishes that just feels fancy. The way that simple arborio rice turns creamy and silky when treated just right is why this dish is up there at top of my list. Making it just seems like a miracle!
This version of risotto is loaded with sweet and acidic cherry tomatoes and nutty parmesan. The flavors sing of summer and it's perfect served as a main or a side.
