Citrus Ricotta Cakes ~ Baking Class
Sort of like a cross between a cupcake and cheesecake, these mini ricotta cakes are one of my favorite treats. And with the seasonal citrus twist, YUM! You'd never know they were made with whole wheat flour and had oodles of protein, too! Won't you join us?

About the Event
When I say "ricotta cheese," what pops into your mind? Amazing savory dishes like lasagna, ravioli or stuffed shells? Yep, me too. Until I met these mini ricotta cakes were involved.
Ricotta cheese is a moist, soft, fresh, almost fluffy cheese that lends amazingness (and yumminess and protein) to whatever dish it touches. And that includes the sweeter side of things. Friends, I straight fell in love with ricotta cake. *Swoon* I can't explain how the texture and mouthfeel changes into perfection; I just promise you that it does.
And, in this recipe, we're swapping half the white flour for whole wheat and adding seasonal citrus flavors! We're "healthying" this up a little, and perhaps this is the kind of cake you could potentially eat for breakfast.
In this class, we're going to use our muffin tins to make perfect little citrusy ricotta cakes!
So let's BAKE some amazing food together. We'll have tons of fun and learn lots of culinary techniques along the way!
Together, we'll:
- use citrus zest to add a ton of flavor to our ricotta cakes
- make a light and fluffy ricotta cake by aerating and gently mixing ingredients
- learn lots of the ways that ricotta can be used for both sweet and savory applications

This class will be Thursday, May 18th from 5:00-6:30pm EST via Zoom. (PLEASE NOTE EARLIER CLASS TIME.)
