Crispy Zucchini Parmesan ~ Cooking Class

It's a personal challenge of mine to put zucchini into just about anything. This crispy, flavorful, summery zucchini parmesan with fresh basil and punchy tomato sauce is one of my greatest recipe achievements. It's truly fabulous and surprisingly light. I'm very excited to share it with you!

My veggie-loving ways led me to this recipe's creation about two years ago and I promise a single summer won't go by without me making it. The zucchini maintains so much texture, the breading is light and super crisp, the tomato sauce screams "HELLO SUMMER!" and the fresh basil is a fragrant, fresh counterpoint to the cheese. (And, by the way, you can also leave the cheese off if you prefer.)
There's nothing to not love about crispy zucchini parmesan, and I can't wait to make it with you!
