I'm a true beet lover. I love all the colors and all the preparations, but roasted beets are hands-down my favorite. The earthy sweetness is downright addictive and they're delicious served at any temperature. But this salad, friends, this salad right here is perhaps the greatest use ever for beets.
The caramelization of the beets combined with the tang of the dressing, the creaminess of the cheese, and the crunch of the toasted walnuts is otherworldly delicious.
This recipe is a must-have. Just wait until you try it. I think you'll love it as much as I do.
