Spring onions a.k.a. green onions a.k.a scallions are one of my favorite veggies. They're versatile, sweet, inexpensive, easy to grow, and DELICIOUS. I love them grilled, sautéed, fried, and especially tucked inside of these amazing cakes. Let's continue our celebration of spring with this dish worthy of the fanciest brunch party!
