Rainbow tacos are awesome for three reasons: they're tacos, they're delicious, AND we get to eat a wide variety of nutritious things in one compact, handheld thing.Â
"Eating the rainbow" as a concept is pretty simple. Consuming the full spectrum of colors that fruits and veggies offer is a great way to diversify the nutrients you consume. Each color contains different things that are good for you, and these tacos are designed to get more of the good (and oh-so-tasty) stuff into our diets. And, not for nothing, but it's pretty! Â
