About the Event
If you don't love cheese, you can stop reading. But for those of us who truly, honestly, genuinely, obsessively love cheese, this class is for you. We're making TWO KINDS OF CHEESE SPREADS!!!!!
I know I have at least seven kinds of cheese in the refrigerator. Blue, cheddar, gouda, brie, mozzarella, parmesan, and gorgonzola often cohabitate, but there's not often a time when all of them can be used in one delicious recipe. Until I discovered fromage fort! I love that this recipe was born from using all that remains. The tids and bits is what fromage fort is all about. And it'll vary each time you make it becuase the flavor depends on what you've got hanging around.
As for pimento cheese, so many of them are just so-so. I'd only had the grocery store ones for years, and I didn't understand why people loved it so much. Then, one awesome day, I tried some pimento cheese at a party that blew my mind. It was creamy, a little spicy, a little sweet, and was great both as a hot dip with crackers and as a cold spread with veggies. So I started experimenting. I used a blend of cheeses that I had in the drawer (are you surprised?), added some seasonings, some mayo, some textural elements, and hurray! I served it, and it was devoured.
The point is that it's No Waste November, and it's a lovely excuse to enjoy cheese!
So come and join us (IN PERSON!)! We'll have tons of fun and learn lots of culinary techniques along the way! Class will be Friday, November 18th at 6:00pm EST.
