In my humble opinion, a *good* Caesar salad hinges entirely on the quality of the dressing and croutons. And we’re gonna show you how awesome a simple Caesar can be…no raw egg required! As for the croutons, good luck not eating them all in one sitting. Come join us!

Sometimes I crave a good Caesar salad like nobody’s business. There’s something about the crisp greens, crunchy croutons, and the creamy umami-rich dressing that brings it all home for me. There’s no alternative that can scratch that itch; y’all know how that is.
For years, I’d try store-bought dressings and they fell short. And I didn’t try to make it myself as I didn’t want to mess with raw eggs and anchovies. It just seemed like a whole thing I wasn’t prepared for. But then…
I searched for alternatives that nixed the egg. I tinkered and tinkered and finally came up with a recipe that I adore. I make it regularly, and it’s now my favorite use for kale. Seriously, it’s the happiest match!
