Mini Ricotta Cakes ~ Baking Class

Sort of like a cross between a muffin and a cupcake, these mini ricotta cakes are my new favorite treat. You'd never know they were made with whole wheat flour and had oodles of protein, too! You can make them fruity, chocolatey, nutty, or spiced ~ the flavors are up to you! Won't you join us?

About the Event
When I say "ricotta cheese," what pops into your mind? Amazing savory dishes like lasagna, ravioli or stuffed shells? Yep, me too. Until lately...and cake was involved.
Ricotta cheese is a moist, soft, fresh, almost fluffy cheese that lends amazingness (and yumminess and protein) to whatever dish it touches. And that includes the sweeter side of things. Friends, I straight fell in love with ricotta cake. *Swoon* I can't explain how the texture and mouthfeel changes into perfection; I just promise you that it does.
And, in this recipe, we're swapping half the white flour for whole wheat! We're healthying this up a little, and perhaps this is the kind of cake you could potentially eat for breakfast.
