If you've ever had really good gnocchi, it's hard to forget. You may even remember where you were and what you were wearing when you had them. In my humble opinion, they're way up there with the very best dumplings. So why don't we eat them more often???
A lot of the time, gnocchi are made with potato, but these little beauties are made with ricotta cheese. This method cuts down on some of the work and quite a few dirty dishes as well. Awesome, right?
In our springtime rendition of this lovely gnocchi recipe, we're going to use frozen peas, fresh herbs, lemon, and parmesan to make a super tasty and seasonal sauce to compliment our fluffy dumplings. I promise deliciousness!
