Summer's End Ratatouille & Choice of Protein

Ratatouille is a classic and delicious way to enjoy the last of the summer's harvest. Tomatoes, eggplant, summer squash and fresh herbs come together to make a wonderful (and very freeze-able) stew that you can enjoy for months to come. So come join us as we enjoy the flavors of summer!

About the Event
I've been doing some reading about my favorite end of summer dish, ratatouille. I learned that it's of Provençal origin and was created as a way for farmers to use up the last of their summer harvests. It's the signature dish of Nice, the major city of Provence, and has been around since at least the late 18th century.
Many chefs have their take on this dish, but one thing that seems fairly common is that it simmers and simmers for a very long time. That's not ideal for a weeknight dish, and so we're going to speed things up and get a super flavorful rendition on our tables in an hour!
And, while it's simmering, we're going to season and cook our protein of choice!
So gather your squishy tomatoes and soft eggplants, and come cook along with us as we make a glorious no-waste ratatouille in a flash. We'll have tons of fun and learn lots of culinary techniques along the way!
Together, we'll:
- make the most of our knife skills by cubing up lots of produce
- learn that past-prime veggies are still very excellent
- take advantage of tomato paste to thicken our dish
- balance all the flavors so the dish sings
- have fun with our cooking community!

This class will be Thursday, September 7th from 5:30-6:30pm EST via Zoom.
